Backqround During 1991, the Los Angeles County Health Department inspected the kitchen at the Santa Monica civic Auditorium and determined that upgrading is needed in order to comply with Health Department requirements. Additionally, the Santa Monica Fire Department has determined that modifications to the fire suppression system are necessary to satisfy current code requirements. The cooking range's exhaust system is inadequate due to age and needs to be replaced to meet current standards. During the FY 1992-93 budget process, the City Council approved funding for this remodeling. The kitchen is being completely refurbished, including new cooking equipment, refrigerator, steam tables, exhaust system and lighting. The kitchen is rented by caterers for banquet - 1 - 6-~ .
